Turkey medallions with spaetzle
Ingredients (for two people):
300 g spaetzle (Swabian-style noodles)
200 g turkey fillet
200 g mushrooms, sliced
1 onion
2.5 tablespoons oil
salt, pepper
150 ml cream
100 ml chicken broth
100 g cream cheese with herbs
50 ml white wine
1 teaspoon curry powder
Directions:
Cut the turkey fillet into thin slices, clean and slice the mushrooms, and peel and chop the onion.
Bring a large pot of water to the boil for the spaetzle. Add a pinch of salt and a tablespoon of oil, then add the spaetzle and cook for 10 minutes.
Heat 1.5 tablespoons of oil in a pan, and fry the turkey in batches, seasoning with salt and pepper.
Remove the meat and set aside. Add the onions to the pan and fry until tender. Put the turkey back into the pan, and pour over with chicken broth and cream.
Add the mushrooms, cream cheese, white wine and curry powder, stir and simmer over low heat for 30 minutes.
Adjust seasonings to taste and serve together with the spaetzle.
