Sweet and sour eggs
Ingredients:
100 g cubed smoked ham
1 large onion
2 tablespoons flour
ca. 1 teaspoon lemon juice or mild vinegar
pinch of salt
pinch of sugar
horseradish
eggs (as many as you want to eat)
mashed potatoes
Directions:
Make a roux with the flour and a bit of milk and water. In a separate pan, fry the ham and onions, reserving some for the sauce, and the rest for the mashed potatoes.
Add salt, lemon juice or vinegar, sugar and a tiny amount of horseradish to the sauce.
Beat each egg separately in a cup and add them in quick succession to the bubbling sauce.
Carefully watch the texture of the eggs – they need to remain runny on the inside. Add some ham and onions to the sauce.
Serve with mashed potatoes topped with the leftover ham and onions.
