Lentils with spaetzle

Ingredients
400 g lentils
a few small onions
200 g lean smoked streaky bacon
40 g lard
40 g flour
salt, pepper
4 wieners
Wash the lentils and soak them overnight in cold water.
Chop the onions and cook them in oil over a low heat until translucent. Put onions, bacon and lentils in hot, unsalted water and cook until tender.
In the meantime, make a roux with the lard and the flour. Stir into the cooked lentils and season with salt and pepper.
Remove the bacon, slice it and arrange the slices with the wieners over the lentils.
Spaetzle (southern German-style noodles made from flour and eggs) make an ideal side dish.
If you wish to add further flavor to the lentils, add a few bay leaves and cloves while cooking.
